Diane & Danny’s Fresh Apple Cake

Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 3 heaping capfuls of cinnamon from spice jar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups chopped Granny Smith Apples (1/2 inch pieces)
  • 3 cups whole pecans
  • 3 eggs, beaten
  • 1 cup vegetable oil (Wesson or Crisco)
  • 2 teaspoons vanilla extract
  • Powdered Sugar, to decorate (Optional)

Procedure

  1. Preheat oven to 350° F.
  2. Prepare a Bundt pan with no-stick spray. Set aside.
  3. In a very large mixing bowl, mix dry ingredients: flour, sugar, cinnamon, baking soda, salt.
  4. In another bowl, combine apples and pecans.
  5. Add apples and pecans to dry mixture. Coat the apples and pecans completely.
  6. In pecan bowl, mix wet ingredients: eggs, vegetable oil, and vanilla.
  7. Using cooking only Pyrex gloves, pour the wet ingredients into the apple flour mixture. It is best to mix all of the ingredients by hand with gloved hands. You have to keep working the ingredients until everything is mixed extremely well. It will look like a very chunky brown mixture.
  8. Place by handfuls into the prepared Bundt pan.
  9. Bake at 350 for 1 hour.
  10. Once baked, let cool for approximately 10 min then remove from pan by flipping upside down onto a cake platter for serving.
  11. Serve with Powdered Sugar. Optional.
