Diane’s Quiche

Ingredients

  • 2 Marie Calendar deep dish pie crusts, thawed
  • 8 oz Swiss cheese, cubed
  • 1/4 cup flour
  • 3 large eggs
  • 1 cup half & half
  • 1 cup milk
  • 1 – 10 oz package frozen spinach, thawed and drained
  • 2 scallion stalks, diced
  • 1/2 cup broccolini, chopped
  • 1/2 cup mushrooms, chopped
  • 1/4 cup red bell pepper, chopped
  • 1/4 cup green bell pepper, chopped
  • salt and pepper

Procedure

  1. Preheat oven to 400° F.
  2. In a large bowl, toss swiss cheese in flour.
  3. In a separate bowl, whisk eggs.
  4. Pour eggs in cheese and flour mix.
  5. Add milk, half & half, spinach, chopped vegetables, salt and pepper to mixture, and mix.
  6. Place the pie crusts on a baking sheet, and poke holes on the bottom of the crust, using a fork.
  7. Pour mixture into crusts, evenly.
  8. If needed, add additional milk to fill.
  9. Bake for 50 minutes, until the top is golden brown.
