
Ingredients
- 2 Marie Calendar deep dish pie crusts, thawed
- 8 oz Swiss cheese, cubed
- 1/4 cup flour
- 3 large eggs
- 1 cup half & half
- 1 cup milk
- 1 – 10 oz package frozen spinach, thawed and drained
- 2 scallion stalks, diced
- 1/2 cup broccolini, chopped
- 1/2 cup mushrooms, chopped
- 1/4 cup red bell pepper, chopped
- 1/4 cup green bell pepper, chopped
- salt and pepper
Procedure
- Preheat oven to 400° F.
- In a large bowl, toss swiss cheese in flour.
- In a separate bowl, whisk eggs.
- Pour eggs in cheese and flour mix.
- Add milk, half & half, spinach, chopped vegetables, salt and pepper to mixture, and mix.
- Place the pie crusts on a baking sheet, and poke holes on the bottom of the crust, using a fork.
- Pour mixture into crusts, evenly.
- If needed, add additional milk to fill.
- Bake for 50 minutes, until the top is golden brown.
