
Ingredients
- 1 TBS extra virgin olive oil
- 7 oz bag of shells
- 1/4 cup chopped cilantro
- 1 tomato, diced
- 1/4 onion, chopped
- 2 potatoes, cubed
- 6-7 cups water
- 1 chicken stock container OR 1 chicken bullion cube
- salt and pepper
Procedure
- Toast shells and onion in olive oil on medium heat in sauce pan.
- Add potatoes, chicken stock, water, salt, and pepper.
- Bring to a boil, lower heat to a simmer, then cover for 5 minutes.
- Add tomatoes and cilantro then cover. Cook until noodles and potatoes are tender, about 10 minutes.
