Liza’s Conchitas

Ingredients

  • 1 TBS extra virgin olive oil
  • 7 oz bag of shells
  • 1/4 cup chopped cilantro
  • 1 tomato, diced
  • 1/4 onion, chopped
  • 2 potatoes, cubed
  • 6-7 cups water
  • 1 chicken stock container OR 1 chicken bullion cube
  • salt and pepper

Procedure

  1. Toast shells and onion in olive oil on medium heat in sauce pan.
  2. Add potatoes, chicken stock, water, salt, and pepper.
  3. Bring to a boil, lower heat to a simmer, then cover for 5 minutes.
  4. Add tomatoes and cilantro then cover. Cook until noodles and potatoes are tender, about 10 minutes.
