Diane’s Pumpkin Pie

Ingredients

  • 1 unbaked deep dish pie shells (9 inch)
  • 3/4 Tablespoon Cinnamon
  • 3/4 cups of granulated white sugar
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 can Libby’s Pure Pumpkin (15 oz)
  • 1 can Carnation Evaporated Milk (12 oz.)

Procedure

  1. Preheat oven to 425° F.
  2. Prepare a baking sheet covered in foil, and set the pie shell on the baking sheet.
  3. In a small bowl, mix sugar, salt, and cinnamon, set aside.
  4. In a large bowl, beat eggs then stir in pumpkin and sugar-spice mixture.
  5. Gradually stir in evaporated milk.
  6. Poke multiple holes in pie shell with a fork, then pour mixture into pie shell.
  7. Bake for 15 minutes.
  8. Reduce temperature to 350° F and bake for 40-50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours.
  9. Serve immediately or refrigerate.
  10. Serve with Whipped Cream.
