
Ingredients
- 1 lb macaroni (reserve 1/2 cup of pasta water)
- 8 tbsp unsalted butter
- 3 minced garlic cloves
- 1 minced shallot
- 3 tbsp AP flour
- 8 oz freshly grated cheddar
- 8 on freshly grated white cheddar
- 8 oz freshly grated Gruyere
- 4 cups heavy cream
- 4 oz. cream cheese
- 2 tsp salt
- 2 tsp white pepper
- 2 tsp paprika
- 2 tsp garlic powder
- 2 tsp onion powder
Procedure
- Preheat oven to 350.
- Boil 1lb macaroni until al dente, making sure to reserve 1/2 cup of pasta water, set aside
- Sauté garlic and shallots for 2-4 minutes, then add in flour until light golden
- Add heavy cream mixture, pasta water, and cheeses until melted
- Add macaroni
- Add cheese on top and bake 350 for 10 minutes until top layer is melted
