Macaroni and cheese

Ingredients

  • 1 lb macaroni (reserve 1/2 cup of pasta water)
  • 8 tbsp unsalted butter
  • 3 minced garlic cloves
  • 1 minced shallot
  • 3 tbsp AP flour
  • 8 oz freshly grated cheddar
  • 8 on freshly grated white cheddar
  • 8 oz freshly grated Gruyere
  • 4 cups heavy cream
  • 4 oz. cream cheese
  • 2 tsp salt
  • 2 tsp white pepper
  • 2 tsp paprika
  • 2 tsp garlic powder
  • 2 tsp onion powder

Procedure

  1. Preheat oven to 350.
  2. Boil 1lb macaroni until al dente, making sure to reserve 1/2 cup of pasta water, set aside
  3. Sauté garlic and shallots for 2-4 minutes, then add in flour until light golden
  4. Add heavy cream mixture, pasta water, and cheeses until melted
  5. Add macaroni
  6. Add cheese on top and bake 350 for 10 minutes until top layer is melted
