
Ingredients
- 1/3 pound bacon, cooked and chopped
- 16 ounces frozen spinach, thawed and squeezed dry
- 6 large eggs
- 2 ounces onion, thinly sliced or minced
- 3/4 cup heavy cream
- 8 ounces Swiss cheese, grated
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon lemon zest
Procedure
- Cook the bacon until crisp and chop. (400° F – 15-20 minutes)
- Lower oven temperature to 350° F.
- Put all of the ingredients into a large bowl and mix until combined.
- Grease pie plate. Pour mixture into the prepared pan, and spread with a rubber spatula.
- Bake for 40 minutes
