Crustless Spinach Bacon Quiche (Keto)

Ingredients

  • 1/3 pound bacon, cooked and chopped
  • 16 ounces frozen spinach, thawed and squeezed dry
  • 6 large eggs
  • 2 ounces onion, thinly sliced or minced
  • 3/4 cup heavy cream
  • 8 ounces Swiss cheese, grated
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon lemon zest

Procedure

  1. Cook the bacon until crisp and chop. (400° F – 15-20 minutes)
  2. Lower oven temperature to 350° F.
  3. Put all of the ingredients into a large bowl and mix until combined.
  4. Grease pie plate. Pour mixture into the prepared pan, and spread with a rubber spatula.
  5. Bake for 40 minutes
